This will definitely be my new to-go soup. It’s easy to make, has a ton of veggies and lentils in it and is just so delicious! Try it and be hooked yourself!

  1. 1. Place all ingredients (the ingredients should reach the 10 cup line) in your electric pressure cooker als pressure-cook for 25 minutes. [Instant Pot: Press MANUAL and use the minus button to get the time down to 25 minutes]

    Christian….this sounds lovely. Fiesta makes me think of Mexican food, so I will probably sub out the Italian seasoning with some cumin and a touch of chipotle powder.

    Made this last night – delicious! Leftovers are even better! The only thing I changed was that I added Better than Boullion to the water (or I would recommend using part vegetable broth, part water). Added some fresh chopped bell pepper and avocado. Cilantro would be a good addition as well! This is definitely going into the recipe rotation!
